Potatoes With Pine Nuts...


OK mother of mine...I finally made something in the adorable clay pot, you let me borrow. It was really easy and very delicious...

Your granddaughters, even went back for seconds. I had company for dinner that night too. They went back for seconds and asked for the recipe...
  • 8~10 small red potatoes , scrubbed and cut in half 
  • 1 small vidalia (sweet) onion, thinly sliced
  • 4 tbs pine nuts
  • 2~3 tbs extra virgin olive oil
  • 3~4 garlic cloves, crushed
  • salt and pepper to taste
  • 1/2 tsp garlic salt
  • 1/2 cup water
  • 3 tbs fresh basil, cut in small pieces
  • basil sprigs to garnish
Soak top and bottom of 3 quart clay pot in water for about 10 minutes; drain. 

Place the potatoes in the presoaked clay pot. Mix in the onions, pine nuts, olive oil, crushed garlic, garlic salt, salt and pepper to taste. Pour in the water.  

Next time I make this. I will mix everything in a separate bowl first. Then transfer to the clay pot. Except the water. Pour that directly into the clay pot.

Cover the clay pot and place in a cold oven. Set oven at 450 degrees. Cook for 1 hour or until the potatoes are tender. Remove from oven and leave the potatoes covered for 10 minutes. Mix in the fresh small pieces of basil and garnish with the whole sprigs. Serves 5~6.

Love My Rain Barrel & New Spickets...

First of all, I know this sounds completely crazy, but I love my new water spikets (spigots) and rain barrel...

When I moved into this house a year and a half ago, the outside water spikets  (3 of them) had a slow drip. As the months went by, they continued to drip more and more. 
So much more, that my water bill was getting close to $100.00  per month!!! Which was totally crazy, because that bill was usually around $25.00.

So once again, I am calling my plumber. If anyone in the Palm Beach Area needs a good and reasonable plumber let me know and I will share his name and number...

This is one of my new and fabulous spickets!!! 



Yes...I am very aware that this spicket is ugly. Blue is the only color it comes in or at least that is what my plumber had available that particular day.
Believe me... I asked for a pretty color. Such as pink or at least some sort of metal.

Now... here is my other theory. My water bill was creeping up also because of always watering my houseplants and the plants on my porches.

All Things Yellow...

Pink really is my favorite color, and always has been, since I was a little girl!!!  

But I have to say Yellow could very possibly be my second favorite. It makes me think of Summertime and everything that is fun...

From Silver To Pink...

 
Well...Today I was canceled from work.. Not enough Trauma patients in our ICU Unit, for all the nurses scheduled.  

Summer time can be very slow for us.  Why is that? I don't know... You would think there would still be car accidents, motorcycle accidents, bicycle/scooter/skateboard accidents, lets not forget car surfing accidents, falls from roofs/ladders/beds and just plain standing, head injuries, pedestrian versus car, stabbings, gunshot wounds, and the list goes on and on...

So...I'm thinking I should take full advantage of being canceled throughout the summer and get some long awaited (is that a word?) projects done around this house of mine... 

The pink candlestick holder above was silver, purchased from "Don't be surprised ~ Goodwill for $2.99." Did I mention how I love my thrift shops?!

Hhhmmmm...Wonder what my next project will be?!

Lamp Shade Project...


I woke up this morning, thinking I needed to do some sort of small project. And this is what I came up with...

The little lamp on this end table had a very ugly burgundy lamp shade (with stains), that  I have looked at for about 17 years!!! Why so long?! I have absolutely no idea...

I had gone on a "Girls Trip" to Blowing Rock, NC and found this in a clearance section for next to nothing. 

So...of course I had to buy it. With every intention, of covering the shade with pretty fabric when I returned home. 

Yes...I most definitely admit to being  "The Queen of Procrastination."

The fabric I used was from a king size pillow slip (Ralph Lauren).  I had found at GoodWill.  I don't have king size pillows ~ so I made the pillow slip a standard size, and used the left over fabric for the shade...

" This is going to be the day "

WOW!!! I can't believe how long it has been since my last post. Almost everyday I would wake up and say to myself "This is going to be the day". 

But then I would find other things to do instead of writing and posting photos. I feel like I have some sort of creative block going on. I hope that goes away after this post...

Well.. I must say the camping trip was an adventure...There was good, bad, pretty, very pretty, scary and just plan old~fashion ick (one of my favorite adjectives)... 

The first place we went was the Ocala National Forest. It is very beautiful there. The name of the campground was Salt Springs. Let me just say "I will not be camping in the woods in Florida when the temperature is HOT!!!" I'm just say-in... 

We saw all kinds of creatures and had some attached to our bodies not by choice (such as TICKS) Eeeeek!!! and definitely YUCK... 

Here are a few photos...with the exception of a Coral Snake that Randy almost stepped on, and we did not have our camera with us...

A Rattle Snake, that was very big and fat with his tail rattling. He was getting ready to eat a squirrel for dinner when we stumbled across him. Which now, made him angry with us. VERY!!!!  I did have my camera for this little adventure but my batteries were dead ~ go figure. By the time I got them changed with shaking hands he was long gone...


There will be no pictures of the Ticks!!! You will just have to trust me on this one girls... They were in places you could not even imagine and would not want too...



Next stop was St. Augustine Beach... Waaaay better camping for yours truly!!!
