Homemade Apple Pie...

I was looking through some of my favorite blogs and came across this yummy recipe for a Homemade Apple Pie...

The adorable blog is called, Dear Daisy Cottage.  You must definitely visit her website!!! She is the sweetest kindest lady, that lives in an adorable yellow house, takes great photos, has fabulous decorating ideas and tips, and a little puppy named Miss Maggie...   http://deardaisycottage.typepad.com

  • 8 Medium Granny Smith apples, cored & sliced (I peeled mine)
  • 1/2 cup butter
  • 3 Tablespoons flour
  • 1/2 cup packed dark brown sugar (I used light brown)
  • 1/2 cup white sugar
  • 1/4 cup water
  • 1 box of two refrigerated pie crusts
  • cinnamon and nutmeg to taste (I used cinnamon sugar)

Melt butter in sauce pan.  Stir in flour.  Add sugars and water.  Bring to a boil.  Reduce temperature and simmer 5 minutes.

Place one pie crust in bottom of glass pie dish.  Fill with sliced apples.  Sprinkle cinnamon and nutmeg on top.  Pour liquid over apples.  Cover apples with remaining pie crust.  Cut slits into crust.  Set pie dish on top of cookie sheet and put in oven.

Bake @ 425 degrees for 15 minutes.  Reduce oven temperature to 350 degrees and continue baking for 35-45 minutes.

Thank you Daisy Cottage for the delicious and very easy recipe...

A Dogs Life at the Beach...

Hobe Sound, Florida is about  30 minutes north of West Palm Beach.  It is centrally located between Jupiter and Stuart.  Hobe Sound is a quiet little beach community...                                                                                                                                             There aren't too many beaches left in this area, that allow you to bring your dogs and let them run and play...

There were thousands of these Blue Jelly~Fish all along the shore line...Very slimy when stepped on!!! Yuck...Really Yuck... Seriously Yuck...

Yep...these are my white feet along with Randy's white feet...

A couple of paw prints...

And Yep...we do live in Florida with no tan...

To my defense, it was a very rainy day...

Just a pretty sky to look at...

What a fun day...

Rosemary Ranch Chicken Kabobs...

I love trying new recipes...And I'm very fortunate that my girls (Lindsey Nicole and Lauren Olivia) do not mind.  I'm actually pickier (is that a word?) than they are...

I have always told them please try the dish and if you don't like it then "you can get something else that you do."  It has always worked for us. I was never big on making them eat something they did not like...

Ingredients:

  • 1/2 cup olive oil
  • 1/2 cup ranch dressing
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon minced fresh rosemary
  • 2 teaspoons salt
  • 1 teaspoon lemon juice
  • 1 teaspoon white vinegar
  • 1/4 teaspoon ground black pepper, or to taste
  • 1 tablespoon white sugar, or to taste (optional)
  • 5 skinless, boneless chicken breasts ~ cut into 1 inch cubes.  I have also left the chicken breasts whole, not cut into cubes.

Directions:

  1. In a medium bowl, stir together the olive oil, ranch dressing, Worcestershire sauce, rosemary, salt, lemon juice, white vinegar, pepper, sugar.  Let stand 5 minutes.  Place chicken in the bowl, and stir to coat with the marinade. Cover and refrigerate for at least 30 minutes. I let it marinade all day.
  2. Preheat the grill for medium~high heat.  Thread chicken onto skewers and discard marinade.
  3. Lightly oil the grill grate.  Grill skewers for 8 to 12 minutes, or until the chicken is no longer pink in the center and the juices run clear.

Enjoy,
